Care of your paella pan: Our paella pans are made of thin high-carbon steel and will rust if not dried immediately after washing and given a rub-down with a little light vegetable oil. If rust does occur, it can be removed by using an abrasive cleaner.
Care of your Japanese knives: Most of the Japanese knives we sell here at Voodoo kitchen are high carbon steel and will rust and discolour if not cared for. Do not put these knives in a dishwasher. Wash them and dry immediately, and follow up with an application of Camellia oil (see catalogue).
Care of your Tagine Your new tajine must be properly "seasoned" prior to its first use in order to protect the tajine and also to make the most of its flavour-enhancing properties. We recommend that you soak your tajine in water for 12-24 hours, remove and let dry in a shady place for a day. When dry, rub the interior of the tajine (including the top) with olive oil. Add a cup of water, a bay leaf, some salt and whole pepper and place in a cold oven. Set the temperature to 200C and let the tajine "cook" for an hour. This process will remove the harsh clay flavour and will strengthen your tagine. It is now ready for use. Please note, the tajine can be used on a gas flame if a diffuser mat is used, or in the oven but please consider using the charcoal burners that we carry for the authentic flavour. Our tajines are dishwasher safe.
